Today, though, was the day to teach my younger boys a simple cookie recipe. I wanted to try something different and Pinterest did not disappoint with these soft and delectable chocolate chip variety made with cream cheese. It is egg-less in consideration of the allergic child. As an aside, let me tell you how annoying it is to find so many of these recipes that call for six ounces of cream cheese. A block is eight ounces, I really have no desire to leave two ounces unused. So when I found a recipe that actually used a whole eight ounce block I knew it was the one. And boy, was it a hit over here when I first made it. For my palate (and my husband's) it was a bit on the sweet side but the kids thought it was just right. Today we doubled the recipe and I tweaked it a bit by using a quarter cup less sugar.
