No-Egg Cream Cheese Chocolate Chip Cookies

We woke up today with a hankering for baked goods.  The chilly, foggy morning might be the culprit. Sweater weather in these parts also doubles as baking weather.  Since losing the talents of The Baking Girl to the brick and mortar institution I decided it was time to raise a new crop of cooking, baking children.  Teach a man to fish and all that.  Fortunately for me, my kids are open to the culinary arts.  With my mother's unparalleled talent in the kitchen they feel that it runs in their blood, a legacy that must not go to waste. This past summer my oldest learned to cook simple recipes. As he deals with various food allergies, the ability to fend for himself in front of a stove is of an utmost importance.  In other words, I had a very restful summer delegating the cooking.  

Today, though, was the day to teach my younger boys a simple cookie recipe.  I wanted to try something different and Pinterest did not disappoint with these soft and delectable chocolate chip variety made with cream cheese.  It is egg-less in consideration of the allergic child.  As an aside, let me tell you how annoying it is to find so many of these recipes that call for six ounces of cream cheese.  A block is eight ounces, I really have no desire to leave two ounces unused.  So when I found a recipe that actually used a whole eight ounce block I knew it was the one.  And boy, was it a hit over here when I first made it.  For my palate (and my husband's) it was a bit on the sweet side but the kids thought it was just right.  Today we doubled the recipe and  I tweaked it a bit by using a quarter cup less sugar.  The kids did not taste the difference.The complete recipe is at Sweet Little Bird -  https://sweetlittlebluebird.com/soft-batch-cream-cheese-chocolate-chip/
